Jessica has been an absolute inspiration and I feel I have learnt so much from her about Balanced Living. Her recipes are amazing and I’m going to share one of my favourites with you! I use this recipe as a base and add whatever I feel like according to my taste that day!
My husband and I have a muffin with our coffee for breakfast every morning and it’s enough to get us to a mid-morning snack or all the way to lunch time. It’s also enough to fuel the body through a morning exercise session, which has been great! No more burning sensation in our gut while exercising!
AND, it’s GLUTEN, DAIRY AND SUGAR FREEEE!!!
Here it is:
BANANA BLENDER MUFFINS
3 x Bananas (2 for mixture and 1 for topping)
2 x Cups Almond Meal
3 x Eggs
1 x Cup Dates (pitted)
1/4 Cup Coconut Oil
2 x teaspoons Baking Powder
1 x teaspoon Cinnamon
1 x Tablespoon Chia Seeds
1 x Tablespoon Peanut Butter (optional)
Preheat oven to 180 degrees C.
Place all ingredients into a blender, food processor or Thermomix and blend until smooth.
Pour or scoop mixture into a lined cupcake tin.
Slice banana and place a slice on each muffin.
Bake in the oven for 20-25 minutes. Enjoy as breakfast or a healthy snack
