Raw Thai Young Coconut Soup

I have to be honest, I haven’t always liked the idea of a cold soup!  But, since living in a hot climate here in Singapore, it has become more appealing, so I gave it a try!

This recipe is so delicious, fulfilling and nutritious and excellent if you suspect a parasite or dis-biosis in the gut.  Young coconut meat and milk is very nutritious and healing, and is a natural anti-bacterial, anti-viral, anti-parasitic!  It is also full of fibre and good fats (which feed the brain) and help our body to make hormones!

This dish is wonderful to serve as a starter or as a main course meal!

Ingredients

2 cups young coconut water
2 cups young coconut flesh
1 garlic clove
1 knob ginger
1 Tbsp minced lemongrass
1 cup Thai basil leaves, loosely packed (use Basil if Thai
basil not available)
Handful of cilantro (coriander)
2-3 Tbsp's fresh lime juice
1 red Thai chile, optional
Salt and pepper to taste
1/4 cup finely diced red bell pepper (for garnish)
1 spring onion, finely chopped (for garnish)

Puree all but the last three ingredients in a high speed blender.

Season with salt and pepper as desired.

Garnish with the red bell pepper and spring onion.
