OVERNIGHT SOAKED OATS WITH YOGURT SERVED WITH BERRIES AND HONEY

OVERNIGHT SOAKED OATS

Ingredients:

1/3 cup oats

1 tablespoon chia seeds

¼ cup of milk of your choice (including coconut water)

¼ cup Coconut yogurt (Coco Tribe in Singapore from Little Farms, Coyo in Australia)

1 teaspoon vanilla extract

1 teaspoon of honey (for sweetness)

A handful of fresh blueberries

A handful of fresh raspberries

A small handful of sunflower seeds

 Method:

  • I like to use a mason jar for this recipe. If you don’t have a mason jar, you can use a bowl with a lid.

  • Layer the ingredients, starting with the oats, followed by the chia seeds. Then add the milk and yogurt, a teaspoon of vanilla extract and the honey.

  • Screw the lid on and place in the refrigerator overnight.
  • Pile the blueberries and raspberries on top and sprinkle over the sunflower seeds.

  • Pour contents into a bowl when ready to eat, or eat straight out of the mason jar, if you’re on the go.
