Our holiday to Sri Lanka was an incredibly memorable and amazing time spent with family.  The food was out of this world and I can honestly say I did not have one bad meal while we were there!  Every meal was a feast!  This was one of my favourite salad’s and when I found freshly grated coconut at my local Indian shop today, I couldn’t resist but try to make this salad from taste memory!

Not only was this salad delicious, but it is highly nutritious!  The freshly grated coconut is full of fibre and is anti-parasitic, anti-fungal, anti-bacterial and full of good, healthy fat – a miracle food!  Carrots are also anti-parasitic, especially against tapeworm and the crunch and flavour with the coconut is heavenly!

A great salad just on it’s own or to accompany any meal, including a nice hot, spicy curry….or at a BBQ/braai with friends!  The combination of flavours works perfectly!


1 Large Carrot finely grated (approximately 1 cup)
1 cup Freshly grated Coconut (from an older coconut, not a green one)
A handful of Fresh Coriander chopped
1 Spring Onion, sliced
Juice of 1 Lime
Salt and Black Pepper to taste
Freshly Chopped Chili optional

Layer the salad ingredients and mix just before serving!

    So glad I was directed to this blog! I think this is probably now one of my favourite salads, and a definite to share with friends (I am having a BBQ (Brai) with my friends this weekend so it will definitely be making an appearance).
    I had to cook the carrots slightly as I have an allergy to raw carrots, but it was still delicious and hadn’t lost it’s crunch!
